Dan,  I've cooked numerous turkeys in TBE.  Couple of points.  First, get the turkey to room temp before you put it in TBE to cook.  This is assuming you've done your brining, rubbing, and injecting ahead of time.  You basically plan on 10 minutes per pound as a guide.  But you cook it till it's done: around 160* in the breast and around 170* in the dark meat.  Now this time may seem longer than traditional frying but you have to consider when using oil....getting  oil to temp....being careful not to have oil overflow when inserting turkey....cooling oil for storage/discarding after frying.... storing or disposal of oil....cleaning fryer.   Hopefully this helps.  Let us know if you have any more questions and how it turns out.  Dee

The BE has only on and off. The SRG has a high and low setting and you can also set it anywhere between high and low.

BBQF -  I've been very happy with the smaller turkey's (under 13lbs) on HIGH for just about the whole cook with dry wood chips in the smoker box and when the smoke stops I live LIFT the lid.

Frank---As a point of clarification...the larger model of TBE the 2500 model, has a knob to adjust the flame...the 1600 model only has on and off. I don't know if they sell the larger one anymore. I got mine at Costco a couple years ago.

The 2500 is officially out of production and no longer available thru Char-Broil --- so I suspect they are not around except in a few garage sales. Of course Tommy found his at the dump - in perfect shape.

The SRG is nearly the same size but has more control, the lid and the grate. I suspect if you own a 2500 you could purchase a smoker box and a grate and be nearly in business like an SRG. I suspect that Kettle top from the smaller Smokey Joe that Lostarrow is playing with could maybe come close to being the right size to place on top of the opening. I suspect.

I like to roast on high until an internal inner thigh temp of about 130 degrees or so and reduce heat until finished.
