Bacon wrapped stuffed chicken breast

Cooked up two bacon wrapped stuffed chicken breasts in my BE. I stuffed them with jalapeno artichoke dip, seasoned the outside with some italian seasoning, then wrapped them with bacon. Everything is better with bacon, right?

The dip is something I picked up at Costco. It has cream cheese, Monterrey Jack cheese, jalapenos, artichokes, onions and mayo in it. It was pretty tasty with chips, so I thought I'd try it stuffed in some yard bird.

You inspired me to try this.

Sorry for the poor picture. It is chicken breasts, stuffed with cream cheese and gorgonzola. Sprinkled with some generic bbq seasoning. I used toothpicks to help hold everything together. Hopefully the filling doesn't ooze out too much while cooking.
How long should I expect them to take?

Looks good JD, you'll have to let us know how they turn out. I used toothpicks to help hold the bacon on too. 


I have been kicking around some other ideas on what to stuff the chicken with.

They were pretty darn good. I wish so much of the filling hadn't oozed out into the bottom on TBE, but oh well. I definately need to get some racks of some sort pronto, cooking on the basket upside down almost wasn't enough room for those guys.

Kinda hard to keep filling in a chunck of chicken like that, but they do look good.

cuda and jd, those stuffed, bacon-wrapped chicken breasts look fabulous. They made my mouth water.

lost a good amount of filling on one of my chicken breasts too. I went to flip it over to look at it and one of my shelves fell down and down rolled the breast. Luckily momma gave me some BBQ food handling gloves and I was able to grab it.
