Smoking a Sirloin Tip Roast, I think?
« on: 07/16/12 18:56:33 »

Picked up a sirloin tip roast or the first label says. But it was on sale and when it was relabeled it was called “Beef round tip”. Now after a little research I discovered that it’s the same cut of meat just by a different name.
Why do we have so many names for the same cuts of meat?

I seared all sides on the RED to seal in the juices before smoking.

On to the smoker over a pan of beef broth, maybe make some gravy when done.

Pulled and panned to rest, looks like some corn made its way on to the smoker.

Plated and some horseradish added for dipping. This was soooo good. The taste had a very nice smoke flavor and the meat was very tender. Better than I expected.

That looks tasty, not a cut of beef I have smoked before, may have to try one. I don't know how it would be if I got it done enough for my wife to eat though.

Looks like it was smoked to perfection!

What internal temp did you take it to?

I pulled it at IT 138. I was worried that it would be a little tough if I pulled to early, but it was outstanding.
