Smoked Mac and Cheese

Our oven in the house thinks it on steroids and maxes out around 500*+ no matter what you set it on.  As a result I'm doing anything that requires oven usage on my Quantum.  Trying to get and hold at say 375* ain't easy. Have to try to manipulate those 5 burners without burning stuff is tricky.  My wife volunteered me to do Mac and Cheese for a 45 person dinner at the church tonight.  After preparation and all I ended up with an extra amount left over.  After finishing the cook for the church's portion I decided to do the  extra for us and added some chips to the cook.  Bottomline it really gave it a good smoky flavor.  So if y'all want something unique, smoke some mac and cheese. Gee that sounds so good.
In Cincinnati with my sweetie and my Tru Infared two burner grill. What more could one want than a couple of steaks, some sweet potatoes, and a cold 6 pack?

I had some cherry and some pecan and just grabbed about a half hand full of each and threw on the grill.  Didn't really think much of what kind.  They were just in the open bag next to the grill.  I guess I need to start thinking more.  Dee

Here's the recipe I use.  It's as close as I've found to what my Mother used to make.  Serves about 12 and easily halved:
1 cooked 16oz pkg elbow macaroni kept warm
1 cup butter sliced
16 oz shredded extra sharp cheddar cheese
4 large eggs, lightly beaten
2 12 oz cans evaporated milk
1/2 teaspoon each salt and pepper
8oz block of extra sharp cheese thinly sliced.  Slice more if needed.
Preheat oven to 375*, Spray a 13x8 inch baking dish with nonstick spray. Or use any size you want
In large bowl combine hot cooked macaroni, butter and shredded cheese stirring until butter is melted and cheese is well mixed in. It gets kind of nice and gummy.  Spoon into prepared baking dish.
In medium bowl combine eggs, evaporated milk, salt, and pepper.  Pour over macaroni stirring well to combine.
Cover completely with sliced cheese.  To me this is what really separates this recipe from many others.
Bake until cheese is lightly browned...about 1 hour
