Smoked Bacon Wrapped Pork Loin

Took a small pork roast that I cut from a loin. Put on a BBQ rub and then a layer of brown sugar. I then vacuum sealed it and put it into the fridge over night.  Next day I removed from the bag and wrapped in bacon:


I then put on some more bbq rub and brown sugar:



Smoked at about 250 degrees for two hours using a little pecan wood and cherry wood.  At the end I basted with a little Secret Six BBQ sauce.




Served up with some cole slaw with homemade dressing, toasted bread and some baked beans:



All in all a pretty good meal.

That looks scrumptious!   Gonna try that soon--it's about sixth or seventh on my "list" of the next things to cook!  Bet it tasted fantastic--pork, bacon and brown sugar.  Yummmmmm!

Thanks guys, original plan was a larger 5lb loin roast but weather caused a change of plans.  Had to cancel the dinner party and ended up slicing the loin into 3 smaller roasts and freezing two of them.  Made the smallest one for my wife and I.  Pulled it out of the smoker at 160 degrees internal.  Only thing I would have prefered is if the bacon had crisped up a little more.  Not sure the best way to accomplish that other than putting the whole thing on an open grill a few minutes.

My gosh you guys make some incredible looking food!  I've seen some great looking dishes on these pages, man am I excited to try some.  Bobo, would finishing with the lid up cause the bacon to crisp?
